I made these potatoes kind of by accident… I ran out of butter and didn’t have any milk either. Enter coconut oil! I wasn’t sure how it would turn out but I thought I’d give it a shot. I used about seven organic yellow “new” potatoes which don’t take long to cook at all.
After the potatoes were done boiling I obviously drained them and then added about a half cup of coconut oil – add more if you feel as though your potatoes are dry. Then I added about 3/4 cup of nutritional yeast for a bit of added nutrients and a subtle “cheesy” favour. I also added a tsp of salt + a tsp of pepper and some loosely chopped curly parsley and mashed to a preferred consistency!
Optional Upgrades: I added some grass-fed collagen to mine for a bit of a protein boost! You could also add hemp seeds too.

While this may not be the healthiest side dish for everyone, these mashed potatoes taste amazing and offer a little bit of an added boost to traditional potatoes.
