This is Us, my new Tuesday night (Warning, spoiler alert!!)

When I first saw the preview for NBC’s new show, This is Us, I was already hooked and clearly many other people were too! I was a HUGE Parenthood fan and was so sad when that show ended. Typically, I am someone who jumps on the TV series bandwagon a little late in the game… (still haven’t watched GOT, sorry)!

As soon as I saw the previews, I knew this show was going to be an almost continuation of Parenthood (it’s not but it is for me). I am a huge fan of the TV drama but, I like a more realistic, down to earth type drama. The first episode of This is Us aired on Tuesday, Sept 2o. I loved it but it was different than I had expected, different in a great way!

I think they did a great job of introducing the characters and explaining in one initial episode what could be quite a confusing storyline. In the first episode, we find out at the end of the episode that they have flipped between past and present and that all of the story line was connected in the most amazing way. It’s beautiful and shocking!

What I gather from the first episode is that the show is going to be a really genuine take on various aspects of people’s lives, positive and negative. It is going to be full of emotion and real drama and not overly far-fetched crap. I am so happy it’s more of a show based in reality and not so over exaggerated. It’s very relatable. I do however, wonder where the series is going to go because the first episode explained so much! I am so excited to have a new series to follow along with!

Why we eat mostly organic food

IMG_7286 copy.pngSeptember 17 -25 is Organic Week! In my opinion it’s frustrating that we even have to say organic food but, that’s besides the point and reality of the situation today. We choose to eat organic for various reasons. It’s true it is more expensive (most of the time) but there are a few things that help us be able to afford it such as Costco and Superstore offering great options for more reasonably priced organic items. Also, the EWG’s Dirty Dozen guide is a great resource as to which foods are worse off as far as pesticides to allow you to decide which to make a priority to buy organic.

Here are a few of my family’s reasons for why we choose organic.

Taste – I find the comparison between eating an organic fruit or vegetable or even chicken for that matter is not even close. I usually find I enjoy eating organic produce more than non-organic. In my opinion, it’s generally more flavourful.

Health concerns – While I generally live by the motto of everything in moderation, I do believe our body has a body burden and can only handle so much chemical crap being piled into it. This is especially concerning for the health of my children as pesticides can be extra detrimental to the developing brain and body.

Environmental concerns – spraying these chemicals is killing our bees, and without bees, we won’t have any food, plain and simple. Also, it’s just not good for our ecosystem in general.

Voting with your dollar – It’s important to me to contribute how I can. I think one of the most powerful things we can do is to put our money where our mouth is. The more people demand organic and unprocessed food, the more we will receive and at a better price. The change has already started a bit with more grocery stores expanding their organic sections and brining in more organic produce.

Seven foods I always have on hand

We all lead busy lives, it’s just they way of the world! I really envy people who can meal plan and have everything figured out for the week on Sunday night. I am not one of those people, I need a little bit of chaos to function. One thing I do know, that makes my life a little bit easier, especially when I haven’t planned ahead my meals for that day, is keeping a few simple ingredients on-hand to make some go-to dishes. These will obviously differ for everyone but, I thought I would share my favourites!

Sweet Potato/Yams

I always have sweet potatoes or yams on-hand. They are nutritious, cook quickly in various ways and I find them super tasty! You can easily make a stuffed-sweet potato dinner for one, sweet potato toasts, sweet potato pasta, or oven fries. The possibilities are endless and there are a ton of amazing recipes online!

Various Pasta Noodles

I eat a lot of pasta! If I am ever in a pinch, I usually try to adapt something into a pasta sauce of some sort as many combinations work well! And, who doesn’t love pasta!?

Pizza Ingredients

Pizza is seriously my favourite food and, I love how versatile it is. I always try to have flour (whatever type you use), tomatoes, feta or goat cheese, and some sort of green leafy vegetable or herb such as spinach or basil. You can even prep the ingredients a head of time and freeze them! Once you get making pizza down to a science, it is so easy to whip up!

Feta or Goat Cheese

I find I can usually lift up an otherwise bland meal with some feta or goat cheese. They keep well and can be added to many recipes from avocado toast to pasta.

Lentils

These are another really versatile ingredient and can be used in many ways. I typically use them as a side or incorporate them into pastas and stews. Great for iron and protein too!

Avocado

Last but not least, avocados. I find this fruit (yes, fruit) goes so well on a multitude of dishes. Again, I come back to pasta but! You can make it into a dressing, dip, put it on toast, use it in pasta, brighten a salad, make chocolate mousse, the possibilities are endless!

Zucchini

I have been absolutely loving zucchini lately, which is funny because I hated the taste for years!! I have found it to be really versatile. I use it as a zoodle or grate it into salad (raw). I also really like making zucchini chips in the oven. So delicious and crunchy! Even better if you have a dehydrator!

Rustic pizza recipe

I absolutely love pizza! In my world, it is its own food group. I love that you can make pizza so many different ways and they can all taste fabulous and I love how easy it is to make. This pizza recipe is my all-time favourite and it is soo easy!

To start I use this recipe for pizza dough. I rarely leave it to rise 24 hours but you definitely can do that. Sometimes I put it in the oven on low with a wet towel wrapped over the bowl so it rises more quickly. I also, sometimes like a bit of a thicker, more flatbread type dough so I don’t leave it to rise too much in that case.

This particular recipe is a white pizza so there is no tomato sauce but you could definitely add some if you prefer.

I spread my dough out on a pan and drizzle with oil of choice. Typically for pizza that is EVOO but, some say heating EVOO is bad as it oxidizes so choose what oil you prefer, or brush with grass fed butter. I also like to mince some garlic and spread out with the oil or butter.

Then I add some cherry or grape tomatoes, mushrooms, and feta cheese. Bake for about 15 minutes or until the crust is golden. I then rip fresh basil leaves and disperse them over the pizza. To finish it off I drizzle with honey and cold pressed EVOO. I love the saltiness of the pizza and feta cheese combined with the sweetness of the honey.

That’s it! A super simple, rustic pizza recipe!

I love making pizza because it is always a great way to get the entire family involved in cooking dinner, especially the little ones!
