I have been interested in spiralizing for quite a while now but I had never purchased a spiralizer.
Last week, I finally decided to bite the bullet and test one out. I am a fan of eating raw food but zucchini was never my favourite vegetable. I mean if eating deep fried zucchini blossoms counts, then it’s my favourite. Spiralized food always looked so amazing but I wasn’t sure how much I would use a spiralizer so I opted to try out a smaller hand-held version that makes spiralized ribbons of your oblong vegetables. It was 20 bucks and I have to say it works pretty well.
In my opinion, this is the best way to eat zucchini. I love the thin, crisp texture of the vegetable ribbons. It adds a lot of volume to the salad with a little bit of crunch.
So, as of late, here is my salad of choice, including some zucchini and carrot ribbons.
All I do is start with a base of greens, whatever you want, kale, spinach, chard, arugula, etc. I have been using mostly kale.
Then I spiralize one zucchini and a couple of carrots. I squeeze the juice of one lemon over top of all of the ingredients (this will also help the salad to stay more fresh, longer).

Top with pumpkin seeds, sea salt and cracked black pepper, and to finish it off I drizzle with some EVOO. Adding an avocado is a nice touch too.
I eat this as a snack, lunch, or side.
