This recipe is so simple, and so easy.
I don’t eat too much meat but I will cook chicken occasionally.
I made a pan with two chicken thighs but you can certainly do more in a larger pan.
All you need is:
Chicken – I use thighs
An oil – I used olive oil but you can use whatever oil you like
Herbs – I used a chicken fresh herb blend with rosemary and thyme
1 onion, sliced
1 smashed garlic clove
Potato or sweet potato cut up
You can add other roasting vegetables as well.
All ingredients organic.
Thrown in a pan with oil and baked at 375 for about 40 to 45 min.
