My random protein pesto pasta

So, sometimes, I just have no clue what to make for dinner. I do not follow a gluten-free diet and I am by no means dairy-free. But, since I follow a mostly vegetarian diet, sometimes I come up with random gluten-free, dairy-free and vegan meals.

When I was at the grocery store today I decided I was going to make some sort of pasta. I had heard about black bean pasta and so I decided to try it, especially because it is high in protein and fibre. So, I picked that up, then I thought what can I put with it? Whenever I don’t really know what to make, I know I can generally use a pesto and it should taste okay. I used Joyous Heath’s kale pesto, except I used spinach and parsley.IMG_0306

Also, to note, my mother tried it and it is approved by her. She was reluctant at first but was actually pleasantly surprised.

So, here’s what I did:

Step 1 – Make pesto

Step 2 – Saute vegetables/legumes

I started with a yellow onion and then used tomatoes, peas, and garbonzo beans and then added smoked tofu

Step 3 – Boil noodles for 6 minutes and add them to the sauté

Step 4 – Add pesto and top with sunflower seeds
